The gentlest dal in the pantry

Every Indian kitchen has a hierarchy of dals, and moong sits at the easy end of it. Split, husked and pale yellow, mogar dal cooks faster than any other, needs no soaking, and produces a soft, mild, almost creamy dal that carries spice without fighting it.

It's the dal of khichdi, of convalescence, of a child's first solid meals, and of a plain weeknight dinner when nobody has the energy for anything complicated.

Unpolished — and it makes a difference you can see

Most dal in the Indian market is polished, sometimes with water, sometimes with oil, sometimes with talc or artificial colour, to make it look uniform and glossy on the shelf. It's cosmetic, and it costs the dal part of its outer layer.

Orgild Mogar Dal isn't polished. Ours looks slightly more matte and slightly less uniform than the shiniest bag on the shelf, and that's the point.

Cooking note: rinse well. Soaking isn't necessary, though 15 minutes helps. Pressure-cook 1 cup dal with 3 cups water for 2–3 whistles, or simmer open for 20–25 minutes. Add salt after cooking, not before.
