What khadi sakar is

Khadi sakar — mishri across most of north India, kalkandu in the south — is sugarcane sugar allowed to crystallise slowly into large, irregular pieces rather than being milled into fine uniform grains. The slow crystallisation is the whole method, and it's why the chunks come out uneven, glassy in places, and pale gold rather than snow white.

It has held a particular place in Indian households for a very long time: the prasad bowl, the mukhwas dish, the glass of warm milk, the small sweetness offered to a guest.

Made from certified organic cane

Our sakar comes from sugarcane grown without chemical pesticides, synthetic fertilisers or GMO seed, through the same organic farmer collectives that supply the rest of the Orgild range.

A note on texture: these are traditionally formed chunks, so pieces vary in size and shape and some crystals may be cloudy while others are clear. That's characteristic of slow crystallisation, not a defect.

Storage

Store in a cool, dry place away from direct sunlight. Reseal the pouch after every use, or transfer to an airtight jar. Keep away from moisture — humidity will make the crystals stick together.
