If your last batch of moong didn't sprout, it probably wasn't you

This is the most common complaint about sabut moong, and it's almost never the cook's fault. Sprouting needs living seed. Moong that has been polished, heat-treated, over-aged in a warehouse or fumigated will sit in the muslin for two days and do nothing.

Orgild moong is unpolished and untreated. It germinates the way whole green gram is supposed to — visible tails inside twelve to twenty-four hours in warm weather.

Cooked, whole moong holds its shape better than any split dal. It makes the thick, textured mag that Gujarati kitchens serve with rotli, the Maharashtrian usal, and a khichdi with real body to it.

Sprouted, it becomes a completely different ingredient — crisp, faintly sweet, eaten raw in salad and chaat or lightly steamed and tempered.

Cooking note: rinse, then soak 6–8 hours or overnight. Drain, add fresh water, and pressure-cook 1 cup moong with 3 cups water for 3–4 whistles — fewer if you want the beans whole and distinct. Salt after cooking.

To sprout: soak overnight, drain thoroughly, tie loosely in damp muslin or use a sprouting jar, and leave 12–24 hours in a warm spot. Rinse once midway. Refrigerate once sprouted and use within two days.
