The weeknight dal

Every other dal asks something of you in advance. Chana needs soaking. Rajma needs a night. Even toor wants a proper run in the cooker. Masoor asks for nothing — fifteen to twenty minutes in an open pan and it's done.

That's why it's the dal that ends up on the table on the days nobody planned dinner, and why most Indian kitchens keep a jar of it regardless of what else is in the pantry.

Orange in the packet, gold in the pot

First-time cooks are often thrown by this: masoor dal goes in bright orange and comes out a soft yellow-gold. Nothing has gone wrong. The colour sits in the outer layer and softens as it cooks. If anything it's a useful check — dal that stays stubbornly orange usually hasn't cooked through.

Unpolished, and it shows

Most dal on the Indian market is polished — with water, with oil, sometimes with talc or added colour — so it looks glossy and uniform in the bag. It's purely cosmetic and it costs the dal part of its outer layer.

Ours isn't polished. It looks slightly more matte and slightly less perfectly uniform than the shiniest bag on the shelf. That's the point.

Cooking note: rinse until the water runs clear. No soaking required. Simmer 1 cup dal in 3 cups water for 15–20 minutes, or pressure-cook for 1–2 whistles. It cooks fast and can catch, so stir once or twice and keep the flame moderate. Salt after cooking.
