The ghani, not the machine
Walk into most oil factories and you'll find a screw expeller running hot and fast, followed by a refinery that strips the oil of colour, aroma and most of what made it worth pressing. We didn't build that. Parampara oil is pressed in a wooden ghani turning at low speed — the method the seal on our bottle depicts, and the reason our oil looks and smells nothing like the pale, odourless stuff on supermarket shelves.
Slow pressing keeps the temperature down. Low temperature keeps the oil's natural compounds, its aroma and its character intact. It also means we produce less oil from the same seed than an expeller would. That's the trade we've chosen to make.
Black sesame, specifically
We press black sesame rather than white — the darker, stronger-flavoured seed that Indian kitchens have always reserved for the foods that matter. Til laddoo at Makar Sankranti. Tilkut in the winter. The oil that goes into pickles because it keeps them. Black sesame gives a fuller, nuttier, more assertive oil than white sesame does, and it is what our grandmothers reached for.

A note on heat: unrefined oils have a lower smoke point than refined ones. This oil handles everyday Indian cooking, sautéing and shallow frying comfortably. For very high-heat, prolonged deep frying, use it at moderate temperature rather than pushing it to smoking.
